Lightly Barbecued Chicken with Jasmine Rice and Roasted Broccoli

It’s simple, it’s light and never complicated!

Yield: ~2 servings

Prep time: 10 minutes | Cook Time: 20 Minutes | Total time: 30 minutes

Ingredients:

  • 2 chicken breasts

  • Barbecue sauce of choice (Billy B’s!)

  • 1 cup of Jasmine rice

  • Salt, pepper and olive oil

  • Fresh broccoli head

First start to cook your Jasmine rice, follow instructions on the bag.

Next, preheat the oven for the broccoli to 375 degrees. Take your thawed chicken breasts and place in a pan. Add enough water to cover the bottom of the pan and season your chicken breasts with a little bit of salt and pepper. Cook on medium high with a lid on the pan for about 15 minutes. While that cooks, place the broccoli on a baking sheet and lightly season with salt and pepper and olive oil. Put into the oven for about 15 minutes, or until crisp.

When the chicken is done, take out of the pan and slice. Place back into the pan and cover lightly with barbecue sauce, cook until on medium to low heat for another 10 minutes.

Everything should finish cooking right around the same time! Plate, serve and enjoy!
