Crock Pot White Chicken Chili

Start it in the morning, and dinner is ready when you come home!!

Yield: ~4 servings

Prep time: 30 minutes | Cook Time: 4 Hours | Total time: 4.5 hours

Ingredients:

  • 2 chicken breasts

  • 1 can pinto beans

  • 1 can great Northern beans

  • Frozen (or fresh) corn

  • 1 large yellow onion

  • 1 large bell pepper

  • 4 garlic cloves

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp cumin

  • 3/4 tsp oregano

  • 1 tsp chili powder

  • 1/4 tsp cayenne pepper

  • Fresh herbs (cilantro or parsley)

  • 4 oz cream cheese

  • 1/4 cup half and half

  • 1 qt chicken broth

  • Toppings!!

Add your chicken breasts to the crock pot and add all your seasonings: salt, pepper, cumin, oregano, chili powder and cayenne pepper, etc. You can get creative with seasonings, I prefer to add a little more than listed above.

Next, dice your onion, garlic and pepper and add to the crock pot. Dump your corn, beans and chicken broth. Stir and cover to cook on high for 4 hours. You can also cover and cook on low for about 8 hours.

Once cooked, take a fork and shred your chicken right in the crock pot. It should shred fairly easily. Then add your cream cheese, half and half and cover and cook on high for 10 minutes. Stir and until it is thick and creamy!

Add your toppings! Fresh herbs, corn bread, crunchy chips, etc.
