Stuffed Delicata Squash

For the meat lovers and the veggie lovers!!

Yield: ~2 servings

Prep time: 15 minutes | Cook Time: 40 Minutes | Total time: 55 minutes

Ingredients:

  • 1 large Delicata squash

  • 1 head of hydroponic lettuce

  • 1 lb of ground beef

  • 2 slices of bacon

  • 1/2 vidalia onion

  • Handful of spinach

  • balsamic glaze (or any preferred dressing)

  • 2 garlic cloves

  • Salt, pepper for taste

  • ~1tsp cumin, and paprika

  • 1 tsp cayenne powder (optional if you like spice!)

  • 1 bay leaf and few sprigs of thyme

  • Fresh herbs! (I used curly parsley)

  • Grated parmesan or mozzarella

This dinner was inspired and created by my meat loving boyfriend!

First I prepared my squash. Preheat your oven to 375 degrees and slice your squash in half (longways). Scoop the seeds out and lightly oil and salt. When your oven is set, you’ll place the squash face down on a foiled pan and let bake for about 20-25 minutes.

While your squash is baking, prepare your ground beef and bacon. Slice your bacon very thin and cook in a pan at medium high heat, when that is about cooked, add in chopped onion to caramelize. Once done, add in your ground beef and seasonings. I kept my seasonings simple because I love the taste of squash, but feel free to get creative and make it your own. By the time the ground beef is cooked, add a handful of spinach and let wilt.

Take your squash out of the oven. You’ll know it is ready when the skin has a little bit of give. Now, all you have to do is place your meat mixture in the squash, top it off with a little cheese and fresh herbs!!

We added a side salad too! Hydroponic lettuce and balsamic glaze…yum!
