Cranberry Orange Bread

It’s balanced, tart with just enough sweetness to make you want another slice!

Yields: 1 loaf

Ingredients:

  • 2 & 1/2 cups flour

  • 2/3 cup granulated sugar

  • 3 teaspoons baking powder

  • 1/2 tsp salt

  • 3/4 cup sour cream or greek yogurt

  • 1/4 cup milk

  • 3 eggs

  • 3 tablespoons avocado oil (or vegetable oil)

  • 1 cup whole berry cranberry sauce or 1 cup fresh or frozen cranberries- whatever ya got!

  • 1 orange zested and juiced.

Mix eggs, oil, yogurt, milk, orange juice and orange zest.

Next mix in all dry ingredients.

Put 1/3 of the batter into a greased load pan, then swirl in some cranberry sauce/cranberries- repeat 3 times until batter is gone. Save some cranberries to put into the top of loaf too.

Bake @ 350 for 1 hour.

For the glaze- zest and juice of 1/2 an orange. 1 cup powdered sugar. Mix mix mix! Drizzle over cake when it is fully cooled.
