Loaded Zucchini Boats

A new take on zucchini dinners! This one tends to be a kiddo favorite and super customizable.

Yields: 4 servings

Prep Time: 10 minutes | Cook Time: 20 minutes | Total Time: 30 minutes

Ingredients:

  • 3 large zucchinis

  • 1 medium sweet onion

  • Fresh herbs of choice (parsley, oregano)

  • Fresh garlic

  • Seasoned breadcrumbs

  • Fresh grape tomatoes

  • Grain of choice (jasmine rice, quinoa, wild blend rice)

  • Parmesan cheese

Slice your zucchini in half and scoop out the center, making a canoe-like shape and set aside. Preheat your oven to 375 degrees. Next, chop your onions, tomatoes and other veggies of choice. Mix together your grains (great to use your leftover rice) with your fresh herbs, veggies, garlic and other preferred seasonings. Once your zucchini stuffing is mixed, add it into your zucchini boats. Top with your favorite cheese, we love fresh grated parmesan. Set the zucchini on a baking pan and cook in the oven for about 20 minutes. Remove, serve and enjoy!
